Has anyone here ever filleted the cheek of eyes, the bigger the head the better the cheek. roll them in batter and deep fry. best tasting part of the fish. was taught this back in the 70\'s on lake erie. it look like a scallop when you get it out.

Take and smash up some saltine crackers mix in some frying magic and some old bay spice and pepper. Mix egg and milk.Dip fish in milk and egg then cracker mix and drop in deep fryer till golden brown and go at it. Fried taters and coldslaw, WOW.

Heart healthy recipe: Put a thin layer of olive oil in the bottom of a baking pan. Then put a layer of fresh mushrooms and scallions. Lay your saugeye filets on top of that, squeeze some lemon juice on the fish and add sea salt and fresh ground pepper to taste. Bake at 400 degrees until flaky. Take the pan out of the oven and add fresh gound parmasean cheese (the quality of cheese is very impotant - I usually use an imported cheese). Put under the broiler long enough to melt the cheese.

i take my saugeyes and put them in foil season with cajun,greek & belmont(red season salt) slices onions and put the rings over them and a stick of real butter. put on the grill for 45 minutes.

Ok Saugeye have got to be one of the best eating fish goin!! I can understand why so many people get fired up over them. My buddy has it down to a science when it comes to fryin them dudes up, get you some Andies Red or Cajun at walmart or kroger. Put you an egg in a bowl with alittle milk mixed up. Dip the fish in the milk and egg mixture then shake on some Andies in a Tupperware. This batter sticks like a dream!! Fire up some oil at 350, fry them up! Make some steak fries, hush puppies and coleslaw and you have arrived!! Man alive!! Try it some time, I'd love to hear some more good recipes if ya wanna share them. By Fisher

I use Milk/Egg batter and place saugeye fillets in a covered bowl of Drakes Fry crisp. Shake it and pan fry.You can also cut em up into chunks and shake and fry em up.

Walmart and kroger doesn't carry drakes fry crisp.Usually the smaller grocers like community market and some small mom and pop grocers in the smaller villages.

Then throw in some Bush's Grillin beans.They are very tangy and delicious. By Saugmon

I prefer a sweet taste to my fish so I use butter milk pancake mix, mix in about 1/4 percent regular sugar, dampen fillets and coat with mixture, fry at 375 in peanut oil. Thats my favorite way, at least with naturaly sweet fish like eyes, crappie, and gills. Give it a try and let me know what you think. By Basshawk

I use the same egg & milk dip but I like to coat them with fryin' magic. To season it a little more I mix in a good sprinkling of Mrs. Dash with the fryin' magic also bought at wal-mart or Kroger. By Old sylvan
